The USB audio part should be relatively straightforward these days, there are numerous reference designs and even past projects in Elektor that could have an RIAA preamp added but it might be nice to add 96kHz or higher sampling capabilities to make the project stand out and also to appeal to the more specialist area of vinyl archiving (museums and national libraries etc.).
